here is a list of my gear, please tell me which remote would work best. I am a bit of a newbie, and it will have to be easy enough for me to teach my fiance how to do it.

Sony DVP-CX995V 400 DVD changer
Sony STR-DG710 reciever
Kenwood CD-403 5 disc CD changer
Toshiba Regza 47HL167 47" LCD TV
320 gb PS3
250 gb XBOX 360
I will be adding a Blu-Ray changer, probably the Sony BDP-CX960

After doing some research, it seems like the only remote that will be able to control all of these components is the Harmony 880. I know I will have to get some kind of adapter for the PS3 (although I don't really know what kind, any help with that would be great), but every other remote seems to not be able to control the 400 disc changer. Any suggestions on this matter would be great!

I think you need to do some more research then. Or, give us some more of your criteria. Budget, DIY or pro-programmed?

What remotes are you refering to? All of the remotes I deal with can control the Sony 400 disc changers.

I will be DIY, and would like it to be under $200. I really don't have any criteria other than easy to use, and will control all my systems. Most of the things I have read online said that other remotes don't allow you to get to the disk explorer on the 400 disk, and I was told that the 880 will display the disk's on the remote to bypass that problem. This is my first time getting into these things, so I don't need it to control lights, or blinds or anything else. Just something that will handle the big dvd and blu ray players and everything else.

oh... one more thing. I am interested in the feature that allows you to display your dvd's on the remote via csv file. I am assuming this will bypass the "disc explorer" feature on the jukebox. I just want to be able to select a dvd without having a hard copy of my dvd's laying around. Also, I was wondering if you could load a different csv file for multiple players. I would want one for my dvd changer and one for the blu ray changer, so they need to be seperate.

The only remotes that can handle what you want are not DIY and cost way more that $200. However, you may look into Redeye. It's an app for iDevices and a base station to control your equipment.

Sounds like you want two way capability in a $200 Harmony remote. The closest thing you can do to normal is an MX-3000 from URC with DMX-3000 software that you must mantain. That will require a lot more budget.
