Rear-Projection TV is just that: a screen that is projected upon from behind. It is a method of presenting and viewing a picture, whether the signal is HDTV or not.

High-Definition TV is a higher-detailed signal, which provides a better picture. It can be presented by any method of viewing, whether front- or rear-projection, or direct-view.
