How do I program my remote to learn my light dimmers is they are not listed in the sr10 program?

After reading up on the remote more lastnight I have some idea of how to learn the retmoe. I tried this with my light remote. The B&K remote picked up the signal but it still isn't turning my lights on/off or dimming them.
How can I set my remote up to be able to adjust my speaker levels without having to go into menu options?

I am looking to have one of the pages under audio (I have created) be used for changing my individual speaker levels on the fly. Is this possible. I use to be able to do this on the receiver I replaced the B&K with. That is a feature I really relied on.
