I would like to place my home theater system out
of sight in a cabinet but still be able to use
a remote with the cabinet door closed. Are there
any programmable remotes able to do this?
Yes, RS 15-2117, OFA 9910, are a few that come to mind. A programmable with "pyramids" is another option.

transmission the answer, if yes, are the Pronto
remotes RF remotes?
Yes, the above 2 are pre-packaged with the required command centers. Pyramids would require "2", one inside the cabinet to convert RF back to IR, and one Outside to convert IR (from a remote) to RF. The prontos aren't RF remotes, but could be used with pyramids
The MX-800 is programmable and RF, but I'm not sure if they package with a "command center"; anthony or edmund would know more about that.
If the cabinet doors are glass, no RF would be required. If wood, then yes. Metal/mirrors may screw up the RF option. My doors are glass so normal IR works fine. You're "out of site" comment assumes wood or other solid/non-glass substance. Usually typical cabinets don't have enough depth to accomodate the command center or second pyramid to be placed in front of the components with good IR access tyo the devices IR "windows". therefore, expect to need "bugs" (also called IR extenders, as well as other euphamisms) to make it all work.
