If you can deal with MIDI, FCP makes 8x8, 16x16, and 32x32 matrix switchers that are not too expensive. The are card frame based, so you may fill them with coaxial, EIAJ (optical), or AES/EBU in any combination of quantaties of 4 (or 2 in certain cases).

The U.S. distributor is UCIK www.ucik.com.

If you are dealing with Crestron, they supply a MIDI interface card, or CNX-MIDI. I do not know if there are non-MIDI control options.

The other way to approach it is to just convert the optical to coaxial using some cheap converters. I think Radio Shack and MCM both sell them for $30-$50 each?
