You might want to look at the network device throughput limits.

Define 'dropouts'- is it losing connection, lack of speed? Signal strength doesn't guarantee speed.

Could the dropouts be caused by lack of overlap?

The EERO app will ask if you're using it as a router or AP.

I had problems with some Luxul APs and when I called to ask about the low speed, I was told that it's not for each device on the network, it's for all channels so when the box for an XAP-310 shows "up to 300Mbps throughput", don't think that's what you'll see.

IMO, that's false advertising. I removed that AP and replaced it with EERO, with much better performance. Also, I can monitor the EERO I have installed from anywhere that has WiFi. Much better speed and more reliable service.
