I have one of each option you mention running at my own house.

1. 40'ish super cheap amazon passive hdmi cable running under the house to a Sonos amp. It works, but I really need to swap out the cable for something more legit. It gets flaky at times and needs to be unplugged/replugged at the TV. I rally think its the cable.

2. Optical out of TV to Sonos amp using Sonos hdmi/toslink adapter (comes with the ARC and Beam but can be bought as an accessory). It works perfectly. BUT you have to have some sort of way to get IR to the AMP for volume control.

3. Headphone jack out of TV to a pair of old rg-59 cables (old recycled component video) That runs to the audio input of Sonos Connect Amp. The Amp is setup to autoplay at approx 75% volume. TV volume adjustment attenuates the volume. Occasional issues where the auto volume on the Sonos does not set correctly. Note, you want to set the audio delay on the Sonos to minimum as well.
I'm Not an engineer, but I play one on TV.
My handle is Tweety but I have nothing to do with the organization of similar name. I just had a really big head as a child so folks called me tweety bird.
