- wipe dry
- sear
- flip
- add spice blend *
- flip and move to warm zone to continue cooking at a lower temp if needed
- tent

in a mortar crush
- pepper corns
- mustard seeds
- fennel seeds
- dill seeds
- chili flakes
add
- granulated onion
- granulated garlic
- salt
