In my experience the font always defaults to the settings you've mentioned. You can, after creating your basic pages, select ALL the buttons of elements onto which you'll have text, and then apply the same text settings to all of them at one time.

You can do this to an otherwise blank/template page and then use that page to create all your other pages. When you swap in your new graphics, the font settings will stay the same.
