We may have located the issue, however.
I read in another area about devices emitting IR signals and flooding the devices and confusing them... so, on a whim, I took all of my remotes and stuck them in a drawer so they can't be sending a signal... voila! the problem stopped.

We changed the batteries in all of the remotes and we now store them in their holders "emitter down".

It has been 12 hours with no issues so far... fingers crossed that was it.
Either that, or by coincidence, whatever interference was causing the problem stopped around the same time I tried this!.
