I've got the basic set-up done i.e., Watch TV, DVD Tape, etc.. Now want to set up one for "Watch OTA HDTV" and "Listen to DMX" (Directv - channels not in list) - Anybody working on these type of activities yet? If so, any pointers?

Already done them...

For Watch OTA HDTV

Start a new avtivity , select watch TV and select simple television activity. Select your compnients as necessary and then rename the activity. You may need to edit the activity to fudge the channels as I did.

For Listen to DMX I started with anoth simple watch tv activity and then editied the XML to remove the television from the list of devices activated. The nice thing is that I get a list of channels on the LCD that have the DMX channel names and it's real easy to switch between them.
