The advanced documentation on Harmony's site illustrates how to add additional menus to an activity or to rename the menus. However, there doesn't appear to be any information about removing a menu altogether. Is this possible ?

Yes, if I understand you correctly:
- Click on a activity on the homepage
- Click Options
- On this page you can "Remove xxx Menu". Example: In "Watch a DVD"-activity, you can "Remove Play Menu", "Remove Navigate Menu" and/or "Remove Control Menu"

Only top-level menus can be deleted using activity options, not individual items below those top-level menus.
