Update:

I went to site yesterday (for a different reason) and was able to obtain the model number from the TV. The TV is a Sony KDL-70R550A and does have an optical output on it.

With the customers IPTV they won't be using the smartTV apps (whether this TV has them or they change the TV) as the IPTV has all the apps required.

Would it be more effective to use and HDMI audio extractor or a Digital to Analog converter?
