It is on the handle with the Chicago Cutlery knife. Much more comfortable with it built into the handle. The Victorinox handle isn't easy to hold. Maybe the 8" will feel better.

I have a few Zwilling Kramer knives that I really like. I do basic wet stone sharpening at home but bring them to a local knife shop for full touch ups a few times per year.

I have a Henkel set I bought back around 1994 I think it was, so basically 25 years old. They've all held up extremely well all this time. I use the santoku one most of the time. It's sort halfway between a western chef's knife and a Japanese cleaver, i.e. the blade curve is sort of halfway between them. I find it most comfortable to use, and it doesn't have nearly as dangerously pointy an end either. If I had to do some heavy rocking type chopping I might grab the chef's knife.

I got a small set of All-Clad at the same time, and those have held up just as well. If you get reasonably good quality stuff it'll likely be the last you ever have to buy. Well, maybe if you bought them at 18 and lived to be 108 or something you might wear some of it out. But, for most of us, we'll croak long before the gear does.

Actually, I got a fairly large set of All-Clad, this being the 'money grows on trees' 90s. But I sold off most of it when I realized I'm not professional chef. Some of it was unused when I sold it. But, the five pieces I kept I've used a lot and it's done very well.

I tried another cheap but nice looking knife. Amazon has this same knife under a dozen brand names all at different prices between $20-40. It's probably worth the $25 i paid for it but not much more. It feels great in my hand but it just isnt very comfortable for slicing or chopping because of the way the blade tapers up at the back near the handle vs just being flat like other knives. Avoid this one and its rebranded cousins.

We cook and grill a lot also. I purchased a set of Cuisinart knives from Costco. I think it was around $30 for a set of 5 or 6 in various sizes. Incredibly sharp and we have been using them for about six months.

We have a few higher end knives when we're getting our cooking on. For everyday use the Cuisinart package has been beyond expectations and I've used them a lot for trimming jerky.

Nice. The block is super cool. I see that knives are like firearms. Always something cooler/better. If i ever won the lottery i would need a 20k sqft house just to store all my gadgets. Amazon would send me a black card.

This +1000! I've used the same for the last 5+ years and have no complaints. Also, it may be obvious to most but I'd like to stress that with these knives you want to always hand wash/dry and NEVER put into the dishwasher.

The Fibrox knives are meant to be used in a commercial environment and can be used in a dishwasher.
